Ingredients

Pumpkin purée 1 cup
Beetroot powder 1 tbsp
Coconut flour 1/3 cup
Egg 1
Warm water 2–4 tbsp (as needed)

Instructions

  • Blend the color base. Mix the pumpkin purée and beetroot powder until the batter turns a smooth, bright red. It should smell sweet and earthy.

  • Add the dry ingredient. Stir in the coconut flour. The batter will thicken into a soft, workable dough.

  • Mix in the egg and water. Add the egg, then pour warm water a little at a time. Stop when the texture spreads easily but does not run.

  • Shape your festive cakes. Press the dough into silicone holiday molds such as stars or mini trees. Kids love helping with this part.

 

  • Bake and cool. Bake at 350°F (175°C) for 18–22 minutes, or until firm. Let the cakes cool fully so the color sets and the texture becomes soft and chewy.
