Ingredients

Ingredient Amount
Canned pumpkin purée (not pie filling) 1 cup (8 oz)
Large eggs 2
Unsweetened applesauce ½ cup (4 oz)
Natural peanut butter (xylitol-free) ¼ cup (about 2.25 oz)
Whole wheat flour 1½ cups (6.5–6.8 oz)
Baking powder 1 teaspoon
Ground cinnamon (optional) ½ teaspoon
Water (as needed for texture) 1–2 tablespoons

Instructions

  • Preheat the oven to 350°F. Lightly grease your pan or use parchment liners.

  • Whisk wet ingredients. In a large bowl, combine pumpkin, eggs, applesauce, and peanut butter until smooth.

  • Add dry ingredients. Stir in flour, baking powder, and cinnamon. Add 1–2 tablespoons of water if needed for a thick, scoopable batter.

  • Portion. Fill each muffin cup almost full for a soft dome shape.

  • Bake. Mini muffins: 14–18 minutes. Regular muffins: 20–24 minutes. Muffins should spring back when gently tapped.

  • Cool completely on a rack before serving. Patience, pup parent — warm muffins are tempting
