Whole wheat or oat flour 1 cup
Baking soda ½ teaspoon
Coconut or olive oil ⅛ cup
Natural peanut butter (xylitol-free) ¼ cup
Unsweetened applesauce or mashed banana ½ cup
Shredded carrots (optional) ½ cup
Egg (lightly beaten) 1
Tip: Out of applesauce? Mashed pumpkin works great too.

  1. Preheat oven to 350°F (175°C).

  2. Grease a small round cake pan or cupcake tin.

  3. Combine all ingredients in one bowl. Stir well until smooth.

  4. Pour into pan and bake 22–25 minutes.

  5. Check doneness with a toothpick — clean means ready.
    Let it cool completely before frosting — no one likes a mushy meltdown.
